Ricotta and Fig Tartine

It’s definitely beginning to feel like Fall. Ingredient-wise, Fall is one of my favorite seasons. And my favorite Fall fruit? Figs! It’s hard to believe that I had my first fig only about two years ago. But I was spoiled. I was in Dubrovnik, Croatia on vacation in August and happened across an open-air market. There were tables full of colorful fruits and vegetables, among them, green and black figs. So I thought why not? And they were sweet, fleshy and absolutely delicious! Needless to say, I went back to that market for figs everyday for the rest of my stay. Every late summer, I look forward to the short season of figs. I usually like to eat them plain, but they are great with other ingredients like ricotta, prosciutto, and honey. In this case, I had leftover ricotta in my fridge and used just that and honey for tartines. They’re quick and simple to make – and yummy!

Directions

  1. Spread some ricotta over each Ciabatta slice.
  2. Drizzle honey over the ricotta.
  3. Layer the fig wedges on top.
  4. Drizzle with more honey, if desired.
